Cashew Nuts: Introduction

Cashew Nuts are a form of edible nuts that are widely preferred for their nutty flavor. These nuts are consumed world over as snack food or used as ingredients in confectioneries, savories and other food substances. They have a frivolous growing site in India, Brazil, Indonesia, Vietnam and in almost every African countries. Being third widely consumed edible tree nut, is a single seeded fruit of a tropical evergreen tree called Anacardium Occidentale. This fruit develops from a sweet tasting false fruit of red or yellow color and is widely used in the preparation of different jams and jellies. These nuts are kidney shaped and also called as 'kernels'. They are obtained from the the raw nut after removing the outer leather-like covering around it by using special methods. Its leathery cover has an oily substance known as Cashew Nut Shell Liquid (CNSL) which is a byproduct and has a large range of industrial usages.

Processing of Cashew Nuts

  • These cashew nuts are made by heating, shelling and peeling the fruits obtained from its tree (anacardium occidentale).While the cashew kernels are made by the salting, sugaring, flavoring, roasting and oil frying. The cashew kernels before reaching the consumer’s hands undergo a number of processes, whereby they are brought into the consumable form.
  • Cashew kernels may be presented in one of the following styles:
  • Whole: Whole kernels are of varied shape with more than 7/8th of the kernel are intact. Kernels with no more than one eighth of kernel broken off are considered as whole.
  • Brokens: Kernels which are one eighth or more of the original kernel are broken off.
